From the harshness of the Canadian winter is born a rare nectar of unsurpassed smoothness and elegance, the aromatic dessert wine known as Icewine.

A unique climate of hot summers and cold, sharp winters provides ideal growing conditions and enables winemakers to produce superb Icewine year after year. In fact, Canada is recognized as the world's leading maker of Icewines and continues to receive gold medals from the most prestigious international wine competitions.

Icewine may be sipped and appreciated on its own, savoured for its rich bouquet of aromas such as peach, apricot, wildflower, honey, passion fruit and lichee nuts. Or, it may be served alongside foie gras, or paired with fresh fruit, young soft cheeses or desserts that are less sweet. Chill Icewine in an ice bucket for fifteen minutes before serving. Once opened, Icewine will keep for several weeks if sealed and refrigerated. Icewine will cellar for five to eight years.

The higher prices commanded by Icewine reflect the scarcity and precarious nature of its production. The fruit left on the vine after the normal fall harvest is vulnerable to rot, ravaging winds, hail, hungry birds, and animals. When temperatures dip to -8°C, the frozen grapes are carefully picked by hand and immediately pressed in this frozen state when the sugars are most concentrated. The yields are small but they are spectacular.

True Icewines must meet the stringent requirements of the Vintners Quality Alliance (VQA), an independent regulatory authority that monitors and enforced wine standards. The VQA symbol is the assurance that Icewine producers have made a fine wine from grapes naturally frozen on the vine in accordance with all viticulture and technical regulations.
